Lactic Fermentation is a process that involves the breakdown of sugar by lactic bacteria. They utilize the pulp substrate as a carbon and nitrogen source to produce significant amounts of lactic acid. This natural fermentation is deliberately used by coffee farmers to promote the efficient removal of the mucus layer attached to the fruit and to help optimize flavor formation.
